It’s MAY! Whoa! Warmer weather is here, end of school is around the corner, and summer plans are being made. My family’s calendar is filling up with dance competitions, church camps, pool time, beach vacations and more. I wouldn’t have it any other way but it means I need to keep the meals simple, the nutrition on point, and the suitcases on standby!
When it comes to most things in life, I am all about SIMPLICITY, including what I do for my family’s health. Two of my GO-TO ways to color my family’s plates are with smoothies and salads!
We all know that fruits and veggies are good for us, but it is critical to have a variety of color in our daily diet (check out the graph below). An easy way to consume more colors is to stock your fridge and pantry with a RAINBOW of veggies and fruits every week. Here are my staples:
-Green: Cucumber, Kale, Spinach, Avocados
-Red: Tomatoes, Strawberries, Raspberries
-Orange: Orange Bell Peppers, Sweet Potatoes, Oranges
-Purples/Blues: Blackberries, Blueberries, Grapes
-Yellow: Peppers, Pineapple, Cauliflower (also available in white and purple!)
On Sundays, I wash, chop, and store fresh produce in containers to make it easy to add to smoothies and salads throughout the week. For smoothies, some of my favorites are cherries, spinach, blueberries, kale, and plant-based protein powder for added nutrition. For salads, I love to add raw veggies such as cucumbers, bell peppers, tomatoes, olives, and chickpeas. For a fun twist on salads, combine various toppings in a mason jar, shake and pour on top of greens when ready to eat!
For 14 years, my family has been flooding our bodies with whole food nutrition every single day.
